Winemaking Process

During the ripening season, the grapes are hand-harvested within a 3-day timeframe when the weather is the coldest, to ensure the best quality. This helps to preserve their natural acidity and fresh aroma, as high temperature will otherwise affect their flavor. After harvesting, they are immediately transported to the winery where cold maceration takes place for 8 to 10 days before fermentation. A low temperature enables more pigments and aromatic compounds to be extracted from the grape skins, enhancing the color and aroma of the wine.

Subsequently, traditional wine fermentation takes place, usually in stainless steel tanks or oak barrels with a temperature set between 25 to 28 degrees Celsius, to ensure fermentation stability and flavor balance. After fermentation, the wine is aged, with the duration depending on the desired style and quality. During these moments, the wine may mature in oak barrels, increasing its complexity and structure.

The entire winemaking process combines traditional craftsmanship with modern techniques, highlighting the pure flavor of grapes and the unique characteristics of the wine regions.
